Botanicals

We proudly use only natural botanicals in our gins, consciously chosen for their character and flavour.

Depending where each botanical is grown they have very different aromas and flavours too, so we have sampled botanicals from all over the world and found the best of the best.

  • Juniper Berries

    Source: Macedonia
    Gins: Dry, Citrus, Pink

Without juniper, there is no gin. Juniper provides the piney, resinous flavour that is the hero of our dry gin and the quiet achiever in our citrus gin.

  • Barley

    Source: Canterbury, NZ
    Gins: Dry, Citrus

Nobody else uses barley as a gin botanical, but we love it. Barley adds a beautiful mouthfeel to our gins, making them nice and mouth-filling.

  • Coriander Seeds

    Source: Canterbury, NZ & Bulgaria
    Gins: Dry, Citrus

We've tried coriander seeds from several regions and countries, and have found a stand-out. Our coriander seed provides beatutifully bright and spicy citrus notes.

  • Ginger Root

    Source: India
    Gins: Dry, Citrus

Ginger root is the 2ic in the citrus gin, and part of the support crew in our dry gin. The gentle warmth provided by ginger root helps provide that warm, fuzzy sensation.

  • Orange Peel

    Source: Gisborne, NZ
    Gins: Dry, Citrus, Pink

Orange - the sweet, crisp, bright opening to any good gin. We use peel from the best oranges in New Zealand, and if you tasted them you'd know why too.

  • Lemon Peel

    Source: Gisborne, NZ
    Gins: Dry, Citrus

Lemon- the crisp tartness that balances out other heavier flavours. We use peel from the best lemons in New Zealand, and the balance they provide is akin to magic.

  • Nutmeg

    Source: Sri Lanka
    Gins: Dry, Citrus

Nutmeg, once the most expensive spice in the world. The woody, gentle spice from nutmeg helps to give our dry gin that deep and complex finish while supporting other notes in our citrus gin.

  • Angelica Root

    Source: Belgium
    Gins: Dry, Citrus, Pink

Angelica root is the glue that holds the flavours and aromas in the gin. As well as being a fantastic fixative, angelica root provides a balanced, earthy undertone.

  • Liquorice Root

    Source: Egypt
    Gins: Dry

Liquorice root is a love it or hate it botanical. The pleasant sweetness from liquorice root supports the long, complex finish in our dry gin that seems to sit on the palate right up to the next sip.

  • Sloe Berries

    Source: Canterbury, NZ
    Gins: Sloe

Our sloe berries are the real deal, from 100% blackthorn trees. When soaked in our dry gin they deliver a beautiful plum and almond flavour quite different to sloes grown in the UK.

  • Rosehip

    Source: Canterbury & Otago, NZ
    Gins: Pink

Rosehip adds a pleasant, floral flavour. Foraged from local, braided riverbeds this botanical is a reminder that it's possible to thrive with very little.

  • Spaniard

    Source: Canterbury & Otago, NZ
    Gins: Pink

Spaniard adds a fresh, melon-like flavour. Foraged from the mountain towering over humdinger's hometown, we are the only gin in the world to use this fantastic botanical.

  • Blackcurrant

    Source: Canterbury & Otago, NZ
    Gins: Pink

Blackcurrants add a beautiful colour and fruity flavour. Blackcurrants are actually quite tart, so they need to be balanced with well selected botanicals.
