A Little History

The Gimlet dates back to the late 19th century when British sailors combined lime juice with gin to ward off scurvy. Traditionally made with sweetened cordial, today’s versions often use fresh lime for a brighter profile. Our recipe leans into that freshness while adding tonic — giving it a distinctly NZ gin cocktail twist.

• Classic Gimlet: Swap the tonic water for lime cordial and serve straight up for a more traditional style.
